Seitan steaks come closest in terms of chewy, meaty texture when properly seasoned and seared. While not identical to beef, the combination of umami seasoning, a good sear, and steak sauce makes for a very satisfying meal.
Cut a head of cauliflower into 2-3 cm thick slices through the center. Brush with olive oil, season with salt, pepper, and smoked paprika. Roast at 220C for 25-30 minutes until golden and tender.
