Use young green jackfruit in brine (not syrup). Drain, shred with forks, season with BBQ spice rub, bake at 200C for 20 min, then toss in BBQ sauce.

Use two forks to shred along the grain. Pan-fry in batches until crispy, then add sauce.
Drain 2 cans of young green jackfruit, shred with forks, toss with BBQ spice rub (smoked paprika, garlic, onion powder, cumin), bake at 200C for 20 minutes until edges crisp, then mix with your favorite BBQ sauce. Serve on buns.
Jackfruit is low in protein (~2g per serving). To boost protein, add beans to the filling, serve with coleslaw made with hemp seeds, or pair with a protein-rich side. The mushroom version has more protein.
