Smoked tofu sliced thin is the easiest ham replacement for pizza. It has a similar smoky flavor and firm texture. You can also use vegan deli slices from Tofurky or Field Roast.
Make a seitan ham by mixing vital wheat gluten with beetroot juice (for pink color), liquid smoke, maple syrup, and cloves. Shape into a log, wrap in foil, bake at 175C for 1 hour, then glaze with maple-mustard and broil.
