Salad topping, baked potatoes, soup garnish
Toss large coconut flakes with soy sauce, maple syrup, and liquid smoke. Bake at 160C for 10-12 min, stirring every 3 min.
Smoked tempeh bacon is the most satisfying for breakfast plates and BLTs, with good protein content. Rice paper bacon gives the crispiest results. Coconut bacon is perfect as a topping. Commercial options like Sweet Earth and LightLife are also very good.
The key is thin slicing and high-heat cooking. For tempeh, slice paper-thin and pan-fry in a little oil until deeply browned. For rice paper, bake at 190C and watch carefully as it goes from perfect to burnt quickly.
