Put 3 tbsp aquafaba, 1 tsp Dijon mustard, 1 tbsp lemon juice, and a pinch of salt in a tall narrow container. Add 1 cup of neutral oil on top. Insert an immersion blender to the bottom and blend without moving for 30 seconds, then slowly pull up. Emulsifies perfectly.
