Replaces the emulsifying function of egg yolks, not the flavor or richness. Available as granules or liquid.
Blend silken tofu with a pinch of turmeric for color, cornstarch for thickening, and vanilla. For richer custard, use cashew cream as the base. Heat gently while stirring until thick.
Turmeric is the most common natural colorant, providing a vibrant yellow. A tiny amount (1/8 tsp) is enough for color without affecting flavor. Some recipes also use annatto or beta-carotene.
